Southern Rock Lobster Ravioli with Ruby Red Citrus Glaze

Directions:

Place grapefruit juice, lime juice, fish stock, garlic and simple syrup into sauce pan and reduce by half over low heat, remove from heat and wisk in small amounts of cold butter and serve at once.

Cook Rock Lobster ravoili in pot of boiling salted water until just tender. Drain, divide  pasta among 6 shallow bowls. Rewarm sauce and spoon over pasta then top with your favorite parmesan cheese.

  • 1 pound Southern Rock Lobster Ravoili
  • ½ cup parmesan cheese
  • 1 ½ cups fresh ruby red grapefruit juice
  • 2 ruby red grapfruit's zested
  • ¼ cup fresh lime juice
  • ½ cup fish stock
  • 1 garlic clove minced
  • 3 tablespoons simple syrup
  • 3 tablespoons cold butter
