Carpaccio of Mulloway and Hiramasa with Infused Victorian Olive Grove Oils
Directions:
Slice Cleanseas Suzuki Mulloway and Hiramasa Kingfish as thinly as possible. Arrange over a large serving plate.
Whisk together your choice of VOG Infused Oil (I recommend Lemon, Lemon Myrtle or Mandarin) and lemon or lime juice with some shredded basil. Drizzle over the fish, cover and refrigerate for 15-30 minutes to allow flavours to develop.
Top with a mound of rocket (arugula) and serve with Waterwheel or Tuckers Natural Crackers or Mountain Bread. Even more wonderful if you spread the crackers first with Yarra Valley Dairy Marinated Feta or Moondarra Chive Goat Cheese.
Enjoy with a typical European Australian pairing the Carlei Green Vineyards Pinot Gris or an Aussie sparkler such as Clover Hill, Jansz or Yarrabank. |
